Winter Black Truffles (
Tuber Melanosporum) - whole flash frozen truffle - 1 lb/454 gr from Perigord, France.
More or less a round shape, its size can go up to the size of an apple and even bigger, but it usually weighs around 2-3 oz.
Its skin has a pyramidal scale and it's flesh goes from grayish to black with thin white veins when mature.
A good truffle should be firm and have a black flesh with thin white veins.
