Made in the Vienne, this cheese is molded by hand in the traditional cylindrical moulds which form its characteristic shape. It has a white rind with a hint of grey blue; its white curd is firm, whilst retaining a natural suppleness. It is ripened for a minimum of 9 days, and when ripened for a long period, its mild fruity flavor becomes more pronounced. Chabichou du Poitou is delicately creamy on the plate.
