The sheep found on Sardinia are from ancient stock and live in the wild. Fiore Sardo is a straw-colored cheese with a brown rind. The Italian word Fiore means Flower. Thus this cheese is named the "Flower of Sardinia." A bit more forceful than Pecorino Toscano, a famous sheep's milk cheese from Tuscany, this Sardinian pecorino has a slightly salty flavor and a long finish. The Pecorino cheese is hard and grainy and has a wonderfully rich flavor, with caramel sweetness, salty tang and a hint of fruit.

Malvarosa - sheep’s milk semi-soft cheese - 4 lb/1.8 kg, Spain.
To save the nearly extinct Guirra sheep, Valencian cheesemaker Enrique began producing this Manchego-like wheel. Frankly, we think it blows Manchego away. The paste is firm, but far more buttery, and incredibly rich and sweet. More like the popular favorite Pyrenees Brebis, this one is compulsively edible, down to its nearly butterscotch finish. Aged for a minimum of three months; careful cheesemaking and gentle pasteurization preserve an enormous hit of succulent flavor. A beautiful Valencian cheese produced from Guirra sheep's milk, a revived, almost extinct breed of sheep. Shape is "servilleta" from being aged in cheesecloth. Butterscotchy and a slice of heaven.

A robust sheep's milk cheese produced in Extramadura, Spain. Its name is derived from the Spanish word for cake, "torta", which denotes the shape of this fine creamy cheese. Thistle is used in its manufacturing, infusing it with fresh herbal hints.
Aged for 60 days, it is soft, yet firm in texture, and has a slightly bitter taste that marries excellently with an earthy red wine, or Cabernet Sauvignon.
