Dark Muscovado Sugar from Mauritius retains much of the flavor of the cane. It has a fine, most texture, high molasses content, and a strong lingering flavor that goes well with other rich flavors; as in gingerbread, coffee, and chocolate.
Store this sugar in an airtight container. If the sugar hardens, place it in a bowl and cover the bowl with a wet cloth until the sugar softens again.
